Penne with Asparagus

This is Spring on a plate! Fresh asparagus and grape tomatoes tie everything together.

What you'll need:

1 package Tallutos' Fresh Cut Penne
1 lb. Asparagus, cut into 2 inch pieces
1 pint Grape Tomatoes
1/4 cup Garlic, chopped
1/2 cup Olive Oil
1 tsp. Salt
1/4 tsp. Freshly Ground Black Pepper
3 tbsp. Freshly Grated Parmigiano Cheese

Penne with Asparagus Directions

    1. Bring a pot of salted water to a boil.
    2. Before cooking the pasta, boil the asparagus in the water for 1-2 minutes or until tender. Remove the asparagus from the water and set aside. Use the water again later to cook the penne pasta.
    3. In a large skillet, heat the olive oil. Add the chopped garlic, crushed red pepper, and sauté until golden in color.
    4. Add the tomatoes and toss well to incorporate.
    5. Add the cooked asparagus and season with salt and black pepper.
    6. Cook pasta according to the instructions on the package.
    7. Once the pasta is cooked, drain and add to the skillet with the tomatoes and asparagus. Simmer for 1 minute in the pan tossing well to incorporate.
    8. Top with Parmigiano and serve.
