Gnocchi Salad with Red Onion Vinaigrette

What you'll need:
|1 lb. Talluto's Ricotta or Potato Gnocchi|
|1/4 medium Red Onion, thinly sliced|
|1/4 cup Parsley, chopped|
|1 tbsp. Sugar|
|2 tsp. Salt|
|1/4 tsp. Black Pepper|
|1 tsp. Garlic Powder|
|1/2 tsp. Dried Basil|
|1/2 cup White Wine Vinegar|
|1/2 cup Red Onion, chopped|
|1 cup Olive Oil|
Gnocchi Salad with Red Onion Vinaigrette Directions
Add all dressing ingredients, except olive oil, into a blender.
Mix well until the onion is finely chopped (about 30 seconds).
Add the olive oil and blend for 15 additional seconds.
Cook gnocchi according to the instructions on package.
Cool under cold running water. Drain well and pat to dry.
Thinly slice a ¼ of remaining onion. Toss the onion with gnocchi and parsley.
Add dressing to taste.
