Spinach Gnocchi with Fresh Tomato Sauce & Ricotta Salata

This is a great recipe to make in the warm summer months when fresh tomatoes are at the peak of the season. The Ricotta Salata is a salted aged ricotta cheese that adds a unique sharp taste and compliments the sweet tomato sauce.

What you'll need:
1 lb. Talluto's Spinach Gnocchi |
2 lb. Diced Fresh Plum Tomatoes |
3 tbsp. Extra Virgin Olive Oil |
4 cloves Garlic, chopped |
4 leaves Basil |
1/2 tsp. Salt |
1/4 tsp Crushed Red Pepper |
1/4 cup grated Dry Ricotta Salata |
Spinach Gnocchi with Fresh Tomato Sauce & Ricotta Salata Directions

Heat the olive oil in a large skillet.

Add the garlic and crushed red pepper flakes and sauté until the garlic is golden in color.

Add the diced tomatoes to the skillet and season with a little salt, to taste.

Add fresh basil leaves to the tomatoes and allow the sauce to simmer for about 5 minutes.

Begin cooking the gnocchi in boiling salted water according to the instructions on the package, for 4-6 minutes.

Once the gnocchi finish cooking, drain well and add to the skillet with the sauce.

Toss the gnocchi with the sauce and simmer for an additional minute.

Top with grated Ricotta Salata and serve.
