Ricotta Gnocchi Salad with Caesar dressing

This is an easy and flavorful pasta salad recipe!

1 lb Talluto's Cheese Gnocchi
0.75 cup of homemade Caesar dressing or a quality store-bought dressing
0.5 cup red roasted pepper strips
1 cup raw broccoli florets, cut to bite-size
2 Tbsp freshly grated pecorino Romano cheese

Ricotta Gnocchi Salad with Caesar dressing Directions

  1. Cook the gnocchi in boiling salted water according to the instructions on the packages, for 4-6 minutes. 
  2. Once the pasta is finished cooking, drain and submerge the gnocchi in a bowl of cold water to stop the cooking process.
  3. When the pasta is cold, drain well and pat dry with a clean tea towel.
  4. Combine the gnocchi, peppers, and broccoli in a large mixing bowl.
  5. Add the Caesar dressing and the grated Romano cheese. Toss well to incorporate.
  6. Serve immediately or refrigerate until ready to serve.
