What you will need:

1 package Talluto's Asaigo Cheese Tortellini
1 whole red bell pepper, cut into strips
1 whole yellow bell pepper, cut into strips
1/2 cup pure olive oil
3 cloves fresh garlic, peeled and smashed
3 Tbsp sugar
1/3 cup red wine vinegar
2 tsp dried oregano
4 leaves fresh basil, chopped to garnish
1 tsp kosher salt
1/2 cup celery hearts, thinly sliced
1/4 cup ripe black olives, sliced

Tortellini Pasta Salad with Sweet and Sour Peppers- Agrodolce Directions

  1. Heat the oil in a large, heavy skillet over high heat.  
  2. Add peppers and fry for 5 minutes.
  3. Add the smashed garlic cloves and fry for an additional minute.
  4. Stir in the sugar, vinegar, and oregano.
  5. When the sugar has dissolved, remove the skillet from heat, season with salt, and set aside to cool.
  6. Cook the pasta according to the instructions on the package.
  7. Once pasta is cooked, cool it immediately by submerging it in a bowl with cold running water.
  8. Once cooled, drain well and gently toss the tortellini with the fried peppers and the chopped basil.
  9. Garnish with sliced celery hearts and olives.
  10. Serve this dish cold to accompany a salad or sandwich.
