Baccalà al forno con pomodoro Baked codfish

Baccala (salted codfish) is a favorite fish which is enjoyed in many regions of Italy and is often prepared at Christmastime. This recipe uses fresh codfish and Talluto's homemade marinara sauce. The fish is prepared in aluminum foil packets and can be either baked in the oven or cooked on an outdoor grill. It is perfect for any time of year!

What you will need:

4 large pieces of fresh codfish fillets
1 container Talluto's Marinara Sauce
1/4 cup capers
1/2 cup green or black olives, cut
4 sprigs fresh oregano
1/4 cup fresh Italian parsley, chopped
1 Tbsp freshly ground black pepper
4 Tbsp Extra-virgin olive oil, (plus more for garnishing)

  1. Preheat the oven or grill to 400 degrees.
  2. Prepare the codfish in the foil packets.
  3. Drizzle 1 Tbsp of oil onto 1 piece of aluminum foil. 
  4. Place 1 piece of codfish on top of the oil.
  5. Spoon some marinara sauce over the raw codfish.
  6. Top the sauce with some capers, olives, and a sprig of oregano.
  7. Loosely wrap the foil packet closed around the fish. Be sure to seal the edges tightly so that the packet creates a steam pocket that allows the fish to cook properly.
  8. Repeat this process for the 3 remaining pieces of fish. 
  9. Place the foil packets directly onto the preheated grill. If you are baking in the oven, place the packets on a baking sheet pan and place the pan into the oven. 
  10. Allow the fish to cook for about 20 minutes in the oven or for about 15 minutes on the grill.
  11. Once the fish is cooked, remove it from the oven and serve.
  12. Drizzle some additional olive oil and cracked black pepper.
  13. This fish is excellent when served alongside some rice or cous cous.
